HOW TO MAKE WHISKEY: A Step-By-Step Guide To Making Whiskey
Every once in a while a book is published that looks small on the outside but reads big once you open the cover. The author, Bryan Davis is a young California distiller of wide experience and rare talent. In How to Make Whiskey he has distilled a satin smooth volume for the serious home brewer ready to take the next step and the inquisitive whiskey drinker who likes to know about what he drinks and talk about it. I am in the second group and am happily writing this review with a few fingers of his smoky American single barrel/single malt next to me. It is very different and much more potent than any single malt I have tried, intensely smoky yet somehow as sipping-smooth as my beloved Johnny Walker Black. Having read the book I think I may know why.
It is a serious authoritative volume and yet a truly entertaining read…interesting for the brewer and for the imbiber. The book has four principal parts (the titles here are mine):
Part One (Should I do it? Could I do It?) is brief but it makes you think as you discover the real and potential dangers–legal, toxic, explosive. It is nice to learn how not to go to jail, or go blind or blow a hole in the roof– to know and avoid the real risks you are taking while you are having more fun than a dangerously bright kid with an unregulated chemistry set for Christmas.
Part Two (Hey, this is interesting and do-able!) tells you first about the tools of the trade and then about all of the basic recipes. It covers the ins and outs of the great varieties of stills and what a difference style, size, and shape can make in the product, as well as all of the fundamental tools of the trade the home distiller will need.
